About the Instructor

Lucia Stuart is a chef, food writer and forager with a passion for making wild food fun to gather and delicious to eat.

“My love of foraging for wild ingredients began as a small child in a Cornish valley when I ate sorrel, primroses and nettle soup. In the 1990’s when I owned a cafe in rural France my interest flourished. For ten years we cooked all manner of hedgerow bounty; figs, nettles and ‘sirop de fleur de sureau’. Wild food grows abundantly all around us. It is fresh, free and fun to find so Bon Appetit!”


Lucia has demonstrated 'wild cooking' and cooked foraged feasts at/for The Royal Botanical Gardens, Kew, The Idler Academy, London, The National Health Service, Wholeschool Meals and Brogdale Fruit Archive, Kent.

Orchard Design (Setting the foundations for a Fruitful Orchard)

Date: 15th June 2013

Time: 10am - 4pm

Cost: £80.00 ( Refreshments & Lunch Included)


This one-day course is for anyone thinking of establishing an orchard or becoming involved in a community orchard project. You will learn about site assessment and rootstocks, planting patterns and spacing, the number and choice of fruit tree varieties, orchard layout and projected yield. The day includes a tour of part of the National Fruit Collections.


There are two field exercises, which give first-hand experience of site survey and orchard layout. The day concludes with a discussion of case studies brought by the students, and you are encouraged to bring photos of your own site and/or trees.


You will need warm outdoor clothes including boots, a clipboard, writing materials and calculator, and the capacity to be active outdoors. Knowledge of the basics of fruit growing, and preferably some experience, will be helpful.


About the Instructor

Having worked at Brogdale in the 1990’s evaluating field trials; Phillip Wilson is still associated with the National Fruit Collection to this day. With certificates in forestry, forest science and tree physiology he is highly qualified to teach the excellent courses in Orchard Design and Pruning here in Kent.


Currently Philip lives in Lyminge, Kent with his wife and three children. He works on independent advisory work in arboriculture as well as contract plant propagation and consultancy in orchard management.

One Day Summer Pruning (Shape Up a Fruitful Garden)

Dates: Saturday 27th July OR Sunday 28th July

Time: 10am - 3pm

Location: Off Site - Poplar Hall Farm, Goodnestone

Cost: £58.00 (Refreshments & Lunch Included)


This course will introduce you to summer pruning apple and plum trees and cover basic techniques and methods to start you pruning at home. The course mainly focuses on trained trees including espaliers, cordons and fans. The course is largely practical and outside allowing “hands on” practice and question time.


You will need: Outdoor clothing & suitable footwear, a pruning saw, secateurs and notepad.

Foraging Walk (Go Wild with Food!)

Autumn Dates: 10th & 24th October

About the Walks

The walks, led by professional forager Michael White, will give you a unique chance to explore some breath-taking Kent countryside whilst learning the secrets of the wild larder.


"Our foraging walks are an affordable introduction to foraging wild food”.


Michael will start the morning with a talk and discussion around wild food and foraging before leading the group on a circular walk identifying and discussing the wide variety of edible plants and fungi in the surrounding countryside.


Participants will take away a better understanding of food in the wild and how to use what’s just outside their doorstep.


About the Instructor

Michael was born and raised in the country and loved it so much that he stayed to build a self-sufficient life for him and his family.  The skills and techniques he teaches are those he uses daily to sustain his way of life and his knowledge and enthusiasm for the subjects ensures an inspirational and informative day. For over ten years, Michael has run courses and workshops introducing hundreds of adults and children to a host of country activities.  He has always had a particular passion for foraging and wild food and is a well-known writer and lecturer on the subject.  Just to prove that it really is possible to live off the land, in 2009 Michael walked in excess of 300 miles from St. David’s, Wales to his home in Kent living exclusively on wild foraged foods.

Cider Making Experience (a Taste of the Brew)

Date: Thursday 21st November

Time: 9am - 4pm

About the Day

The day will start with a history of cider making in Kent as well as covering the health and safety aspects of making cider for commercial use. You will then spend the rest of the morning getting ‘hands on’ with cider making, learning valuable skills from the knowledgeable founder of the Kent Cider Co, Marcus Henderson.


The afternoon will give you a chance to analyse the difference in juices, their acidity and how this affects the resulting cider. Finishing off with tasting, this course promises to be a fun day out as well as a great learning experience, starting you on your path to successful cider making.


About the Instructor

As a young lad growing up in rural Kent, Marcus Henderson developed a love of the countryside and the outdoors from an early age; spending many happy years roaming and playing in the beautiful Kent countryside.


Marcus decided to become a cider maker after his successful indoor career left him staring out of the window and thinking about all of the wasted apples surrounding his house every year.


Through a fortuitous chain of events he met a cider maker who was looking to retire from his orchard and give up his cider making equipment. After some negotiation they struck a deal, part of which was the benefit of his many years of cider making experience.


Soon after, Marcus’ wife got involved and together they set up the Kent Cider Company with a mission to create ciders with depth and unique flavours and finishes.


Now Marcus has agreed to teach at Brogdale to give you the chance to learn from his experience and take a little of his expert knowledge home with you.

Game Preparation (a Taste of Rural Life)

This one off course offers participants a fantastic chance to learn how to prepare small game in fur and feather for the pot. This interactive and fun day includes discussions around the principals of preparing and cooking game,plucking, skinning, drawing (gutting), jointing and sampling cooked game. A great extra to the day is that participants can take home their prepared meat.

Weekend Winter Pruning (get the most from your fruit trees)  

23rd & 24th November 2013/ 30th Nov & 1st Dec 2013

£115 (Full Weekend/Refreshments & Lunch Included)


This course will allow you to understand a range of horticultural techniques and methods to prune your fruit trees with confidence.


Day One will cover the elements of fruit trees, why prune, what equipment to use, when to prune and preliminary steps. The afternoon will consist of a pruning demonstration and participant practice.


Day Two will cover tree forms; training and formative pruning; pruning systems; remedial and restoration pruning; Examples of good and bad practice. The afternoon will look at the professional pruning at Brogdale followed by a tour of the orchards and discussion.
